(ur probably joking, but english isnt a phonetic language, and the “u” being omitted from words in american english wasnt an attempt to make it more phonetic, it was to save ink and paper when the printing machine got popular)

Theres no cheese that is only grilled. If you grill cheese with nothing else it will fall inside the grill. If youre asking of the type of cheese typically used in a grilled cheese sandwich, its called american cheese

You weren’t on a real grill party, I assume…

They are multiple type of cheeses, which can be grilled without falling inside the grill. They are even cheeses porpusely made for grilling, which is called here grill cheese / grilled cheese. (Depending if it is before of after the grilling.)
