Its not the cheese thats being grilled, the bread is grilled, the cheese is between the slices of bread. The cheese melt

“Grilled cheese sandwich” is the full name, and some people say that. Its such a common dish, everyone has it all the time, that they shorten the name so its faster to say

Also despite the name “grilled” you can make them in a pan too, and often times you do make them in a pan. Most people dont have grills

American english refers to different spelling which this isnt an issue youre talking about so this is slightly incorrect, all languages use slang terms or shorten phrases
