with the abundance of character cards it could be fun to get dealt more than 1 to pick from

We could have people receive their character cards one at a time and then put the one they didn’t choose back in the deck. So like 1st player gets 2 cards, chooses 1 of them, the other goes back in. Then only the last character card is known to not have been picked. That could be revealed so everyone knows and not just the last player.
