(yes! Survival check for all of those (note that failing a Survival check to harvest poison badly enough can expose you to the poison again, up to you if itâs worth the risk or if youâd like to stick to harvesting other body parts and webbing))

it wouldnât guarantee you were attacked, it would just mean that if you do encounter any other creatures on your way back home your chances of sneaking past them would be lower than if you had gotten a better roll on your stealth check (but not lower than if you hadnât tried to use stealth at all)
(does harvesting take a significant amount of time? im afraid of other spiders returning. also my survival is untrained at 0 ranks in case thats a problem. and so is stealth)
(Harvesting venom takes 10 minutes, harvesting random body parts or webbing would be faster in this case since itâs less of a fiddly process. Survival and Stealth are both usable untrained, although candidly I would not recommend attempting to harvest venom with a +0 Survival modifier, with no specialized tools and +0 as a modifier youâd have ~even odds of poisoning yourself)

Youâre able to harvest the creatureâs legs, though you canât salvage the creatureâs chitin considering how badly damaged it was. The webbing, on the other hand, mostly disintegrates on contact, and even your most successful attempts at harvesting it mostly just make your hands sticky.
