is grammatically correct, but

“Say pal, …”

is fine in any casual context.

it does get a bit old whenever i’m writing and use way too many commas

I think “Say pal, you…” and “Say, pal, you…” imply two different tones because the one with two commas places more emphasis on ‘pal’.
