I started cooking with gruyere in the last year and it’s S tier. It’s a bit unassuming on its own, but its flavor really plays well with others. Stands out without overpowering.
Provolone is a really good sandwich cheese when the sandwich itself has a lot of flavor due to its relatively mild flavor. It was my go to cheese for subs in particular, and would swap it out for swiss if I want the cheese to play a more prominent role in the flavor.
Cotija cheese is really good in Mexican cuisine. Elote is what immediately came to mind when I tried to think of a dish with it. It’s maybe most similar to feta perhaps with how crumbly it is, but it definitely has a distinct flavor.
You’re missing out on some good cheeses here tutuu you gotta step up your game.
