I want to acknowledge this is as the simpler and honestly more accurate answer. My hypothesis that agent nouns derived from Latin (or Latin by way of French) were the ones primarily gendered, this isn’t the case after looking at an actual list of them. It almost certainly is far more significant when the word entered common use rather than its language of origin. That is, we don’t have the term “rapperess” probably because it entered the language at a point in time when gendering nouns wasn’t in fashion.
